Blend 1/2 tub whipped Earth Balance and 1 C organic cane sugar, add 2 T baking powder and 1/2 t vanilla or almond extract and mix until incorporated. Slowly add 2 1/2 C unbleached flour, a little at a time, until all is incorporated. On a floured surface, roll to about 1/2″ thick and cut out and decorate your favorite shapes. Bake at 350 for 12-15 minutes. Decorate with colored sugar.
Cook 2 T butter and 8 cloves minced garlic in a pan on medium heat until browned, add 1 1/2 C coconut milk and boil. Add 2 heads chopped cauliflower and cook until soft. Let cool and add to food processor. Blend on high, adding olive oil and coconut milk to get desired consistency. Salt and Pepper to taste. Toss immediately with your choice of cooked, drained noodles, or make ahead and reheat.
Add 6 sliced peppers to an oiled grill pan. Season with salt and pepper and cook on low heat until they cook down and brown. Add favorite vegan sausage and cook until heated through. Serve immediately, or make ahead and reheat.
